I tried not to, but @mirkwood pulled me over for speeding before I ever got out of the neighborhood! I'm pretty sure he set a new record for "longest traffic stop that didn't involve weapons"!

I drove from the south west side of SL County, downtown and back in a marked police car twice today. Half that drive time is on I-215 and I-15. At least a half dozen cars sped past me at significantly higher speeds. Not only did I not shoot any of them, I did not pull any of them over either.
That doesn't even factor in the Bud Light van driver who decided after the lanes had merged that he needed to pass me nearly forcing me onto the shoulder. Guess what? He didn't get shot either. Or ticketed. Or stopped.
Imagine that.
But wait...the day isn't done yet. I still have hours and hours to go out and interact with the public again...

Restrictive laws can be a problem, and keeping your mouth shut about things you carry in such an environment is a very good idea. I live in Idaho. Idaho just changed it's law (effective July 1 this year) that a permit is no longer needed to carry a concealed weapon, and it is specifically written into the Idaho constitution that there can be no legislation to prevent carrying openly, so I can be a little freer with what I say online. As far as other states go, I the standard Idaho permit is is recognized in about 25 of them.

I generally carry:
a gun with an extra magazine Small .380 pocket pistol. a knife a multitool a cell phone a flashlight, a zippo lighter my wallet my car keys a pen My keys have a vial of consecraed oil, and a small pill container with varous OTC medicines in it as well as a backup hot spark firestarter.
I also wear a watch, and If I can find the sun, can use the time and the position of the sun to determine direction.
In addition,
If my lung issue is acting up (asthma I think, but it hasn't been diagnosed) I'll carry an albuterol inhaler.
If I'm going someplace away from civilization, I'll also carry a whistle, a compass, and a signal mirror.
If I'm going to be spending a long time riding in a car instead of driving, I'll carry a mini MP3 player.
If I'm at all unsure about what kind of people I'll encounter, I'll also carry my .45 with an extra 4 magazines.
Of course these things are what are on my person. My car has somewhat more.
Before I got married, and my wife objected to the vest I liked to wear (it looks like a fishing vest), I also carried:
A notebook A small first aid kit A sharpie A couple of extra knives A mechanical pencil An eraser a usb flash drive more meds a comb I probably had more things, but that was a while ago and I can't remember so much.

You can say it over and over again as often as you like, it continues to be pure, unadulterated hogwash. Put all the cops that have ever caused someone's death in a room. Ask them all to ask why they did it. There will be zero responses of "he resisted long enough", or "he resisted aggressively enough". The responses will be about the imminent threat of serious harm or death.
Examples: "He was going for his gun"
"He was going for my gun"
"He wasn't stopping and we were headed into a busy street where people were walking"
"He refused to put his hands up and kept gesturing towards his waist band"
"I believed he had a knife, and refused to step away from the child"
What you will hear:
"He refused repeated commands to get out of the car with his hands up, and was hiding his right hand as if to conceal a weapon."
What you won't hear:
"I told him to get out of the car enough, and he just wasn't complying, so I shot him."
I mean, maybe there's a semantics issue here. But it's your semantics which need fixing. Cops don't kill people for resisting.
I suppose you can find exceptions of a bad cop here or there. They must be identified and dealt with justly. The other 99.9% will never kill you for resisting. They may act to end the threat if you pose one, but that's different.

Yeah, pretty certain. I mean, people will begin an encounter with the police for something minor, or not even an infraction at all. But other stuff happens, and it is the other stuff that results in death.
"Do you still believe police aren't easily convinced to use excessive force?"
That's a totally different question. To some people, stern words from a cop are 'excessive force'.
