My husband and I were ready for kids when we got married.  We agreed that we will settle our religious differences before the baby is born.  5 years later, we still couldn't get pregnant.  I was starting to worry that something is wrong with me.  Then I got baptized.  3 months later I was pregnant.  A year after baptism my husband and I got sealed.  3 weeks after that the baby was born under covenant.  I don't believe this is a coincidence.  At all.

With Protestants, you have the same challenge.  They split off the Catholic Church due to their rejection of the Catholic Authority.  And because there's no other authority to be found except for the truthfulness of Scripture, they derive their authority on Scripture ONLY (The Holy Bible).  So the challenge remains - you can't reject the authority of the Holy Bible because that would be wrong.  So then you're going to have to present the case that there is more authority than the Holy Bible and you can't do that by attacking their interpretation of the Holy Bible (the atheist way).  The better way is for you to testify of the truthfulness of the Book of Mormon and the authority of Joseph Smith on its own merit.

    NONE.
The Great Apostasy is a matter of faith in the same manner that the Restoration of the Authority on Joseph Smith is a matter of faith.
No evidence is sufficient to prove that the Apostolic Authority of Peter, who is considered the first bishop of Rome, did not get passed to Bishop Linus, the next Bishop of Rome (the 2nd Catholic Pope after Peter).  Just as there is no evidence sufficient to prove that the Apostolic Authority of Peter was passed to Joseph Smith.
All this is a matter of faith.
Any attempt at evidence-pointing beyond that is simply... Catholic-bashing.  The Catholics have a ~2,000 year history.  It has survived for that long.  The LDS Church has a ~200 year history.  Anti-Mormons have plenty of LDS history material to bash LDS with in just 200 years worth of cultural history, the majority of which is anchored in the USA.  You will have to multiply that by 10, and add the stage of the formation of the entire European continent and the drastic changes in prevalent culture for 20 centuries to match the resources anti-Catholics can use against the Catholics.
This is what I always tell everybody - you can't convince people of the truthfulness of the Book of Mormon and the authority of the LDS Church by showing how the other Christians are wrong.  This is the way of the Atheist which is fruitless.  The only way you can convince people of the truthfulness of the Book of Mormon and the authority of the LDS Church is by showing how the Book of Mormon and the LDS Church is true on its own merit.
I know this sounds like I'm raining on your parade.  This is not my intent.  I'm simply stating my opinion as a faithful LDS converted from Catholicism.

I'm going to assume you're born and raised LDS?
Because, this write-up is not going to go well with Catholics in the same manner that anti-Mormon stuff does not go well with the LDS.  I can only speak for Catholics, of course, because I used to be one.  But then Catholics are the largest Christian denomination, so...
I'll give you an example:  Your entire section about the Apostasy has nothing on the Apostasy.  "Apostles died" and "Roman Emperors burned scriptures" is not definitive support for the Apostasy having occurred.  So the Catholic Magesterium declaring the Pauline Epistles as Biblical while the Book of Mormon non-Biblical is completely within their authority unless you first submit the argument that the authority of the Catholic Church is not valid.
Also this:  "All the scriptures that mainstream Christianity uses to prove that God is done with prophets do not hold water." does not follow because Catholics don't believe such a thing as "God is done with prophets".
Anyway, Talmage has this book, "The Great Apostasy".  That book is instrumental in my conversion.  But I would highly NOT RECOMMEND that book to Catholics.  That entire book is an attack on the history of the Catholic Church that has no bearing on it having been in Apostasy.  It would be like saying the LDS Church is not true because the 3 witnesses to the Book of Mormon left the Church.

    Onward
Pixar did it again.  It’s billed as a story about a kid wanting to spend one day with his dead father but this turned out more to he a story about 2 brothers and their awesome mother.  Maaaan.  My son and I were crying in the theater.  Hit us in the feelz especially with us missing my eldest out on a mission.
This will probably the best movie of the year for me although it’s too early to tell.  Alita Battle Angel ended up my favorite last year and that came out in January.  This movie had me at the edge of my seat.  The development of each character, even the side characters, was great.  The challenges faced by the brothers were perilous enough to make the story compelling but not so scary as to scare young children.  It was just right.  And the moral of the story was solid.
Ok, so this is a Disney property now so they have to push their agenda.  It’s all in dialogue, easy to miss - a female cop mentioned her girlfriend raising their kid.  We rolled our eyes and went on with the movie.

Sure.  If I want it annulled.  But, I would hope that my children would go into marriage with the acceptance that this is unconditional love.  Unconditional.  If in their due diligence of finding a spouse they did not realize <insert condition here>... then it becomes their challenge to figure out how to bring that person to Christ with the said condition.
When Christ gave us the commandment to love, he did not say - love your neighbors unless <insert condition here>.  When he died on the cross, he did not say - I'll atone for your sins unless <insert condition here>.  This is the model of love that I am teaching my children to aspire to.  This is the model of love that Filipino culture teach in their "divorce is illegal" society.  But yes, in the Philippines, there are certain things that is grounds for annulment - shotgun marriage is one of them.

That's not gonna be your biggest hang-up, I don't think.  Baptism can be a private affair if that's what you prefer.  You only need the priesthood authority to baptize you and 2 witnesses to make sure it's done right.
Where you're gonna have a hang-up is membership itself.  This is not a passive church.  Being a convert is an ongoing action - receiving the gift of the Holy Ghost is supposed to inspire you to share the gift with others.  There are Sunday school classes, compassionate service, church fellowship activities, church callings which could include teaching and... because you're a woman, you become an automatic member of the Relief Society and will be called upon to minister other women.  You can, of course, decline all of these.  But being an active member of the church, people will be in the habit of asking these things of you.

@Momcat, your daughter will learn to act as you teach her to act if she trusts you more than her peers.  These age guidelines above are what generally happens in boys and girls who are left to socialize on their own terms - it's what I would call "stages of cognizance in human biology".
Teaching her to act on things not age appropriate to their cognizant abilities will only confuse them.  Of course, these ages are general guidelines and your daughter could possibly develop as an outlier.  But if you're well in-tune with your daughter you will recognize her progression.
That's why in my house (and my house only) - I taught my children the ages specified in For the Strength of Youth or other things are just guidelines and not our house rules.  8 is the minimum age of baptism, but my children will not be baptized even if they turn 8 if they're not ready to be baptized.  16 is the minimum driving age, but my children will not drive even if they turn 16 if they're not ready to drive.  Same with every other age distinctions.  This especially became an issue when the Church changed the age for Priesthood Quorums from their birthdays to the beginning of the year of their birthdays.  My son who had 9 months before he becomes a Priest in the "old policy" was suddenly faced with becoming a Priest at age 15.  I told him - you don't have to be ordained a Priest if you're not ready.  As it turns out, by January he was ready, so he got ordained with the rest of his age group.
Note:  As @Jane_Doe stated, there's nothing inappropriate about females at any age having friends that are male.  What makes it inappropriate is how your daughter behaves around males and how males behave around her.  They way I taught this to my sons is by teaching them simplistic good touch versus bad touch and simplistic concepts of eternal marriage and chastity since they were young children that gradually became more complex as they started to be cognizant of more complex things.  Then I left them to govern themselves in the company of their friends while I stayed in tune with where they are in their journey as young men of the Priesthood.

A parent doesn't have to teach his kids history.  A parent NEEDS TO TEACH his kids good manners and right conduct which includes self-discipline, repentance, forgiveness, humility and charity among other Godly virtues.
A parent doesn't need to know history himself.  A child will learn history out of curiosity.  "Nobody taught me this" - is a victimhood mentality.  The attitude that it is somebody else's fault that I didn't know X - that is an indication of a lack of virtue.  So yes, a parent can successfully parent even when such parent is illiterate if the parent successfully instills Godly virtues in his children, especially the virtue of humility - the acknowledgment that I don't know everything and, therefore, I can learn something from everybody else, living or dead, abolitionist or slave trader.

The robber baron's cruelty may sometimes sleep, his cupidity may at some point be satiated; but those who torment us for our own good will torment us without end for they do so with the approval of their own conscience." - another one also famous.

To be honest @anatess2 - I am of the mind that most people involved in religion or politics - most of the time - do not know what they are standing for; especially if they do not offer themselves as the best example of what they understand as their belief.
