I think you can just use the margarine for whichever category you put it in now. I don't consider it necessarily a milk product, just an extra.

I think you will love the eggs and shortening. I have recently purchased the egg whites and I LOVE them. So easy, and they whip up beautifully. I make Belgian Waffles quite often and they are perfect to whip up quickly without the hassle of seperating and not knowing what to do with the yolks.
