Any fresh artichoke dishes you like?

I have artichokes and am wanting to use them, either in a salad, or cold pasta dish. If you have a specific artichoke meal you enjoy, please share and post how its made. I'd like to whip something up in the next day or so :)

I don't, but since you ask, have you ever had Jerusalem artichokes? They are neither from Jerusalem or the Middle East (it's probably an English-speaking misunderstanding of the Italian word "girasole", which means "sun-turn" or sunflower), nor are they artichokes. They are tubers, more like potatoes, but they do have a mild but distinct artichoke-y flavor. The plant is a type of sunfower of the daisy family.

It really is an acquired taste, I think. For the longest time I hated tomatoes, avocadoes, and artichokes. I found out I'm super allergic to avocadoes but I've slowly started eating tomatoes in more things, and now, I just LOVE artichokes.
