How do I find General Conference music from 2000-2007?

Go to this link https://www.lds.org/ensign/2000?lang=eng and scroll down to other issues and click on the year you're interested in and the May/November editions then look at the conference summary where the music is listed.  Below is the one for May 2007.

Are there any from 2003, 2004, 2005 and 2006?

It appears that you can't.  Not all years have their music extracted for the page linked above.  Not all years have full sessions available for viewing / listening1.  If a year or session has neither option available, unless you can find it from a non-official source, it appears you have no option.

1 If the session itself (as a whole rather than individual talks) can be downloaded, you can extract the songs from it (assuming you have software that will do that, such as Audacity).

But they could add the music from the other Conferences  when its not General Conference.
