Cheese!

Once or twice, I have gotten some bitter cheese. Don't know what causes that. I chalk it up to a bad batch, or maybe one that has gone bad in aging.

Well, I hope it was just a bad batch, I'd be willing to get some again provided I can try it first. The shop I go to only had it in small pre-wrapped wheels so no tasting to check the taste before purchasing the whole amount. If it wasn't for the overwhelming bitter aspect of the cheese it would have gone well with my homemade partial whole wheat sourdough.

I like brie cheese melted on sliced tomatoes on top of prosciutto pizza cooked in a wood fire oven.

Sounds good. I lack the wood fired oven but I should be able to recreate it otherwise.

I love Gouda or Edam cheese. Either one of those on dark bread with butter is yummy!

If you like Edam I suggest giving Butterkasse a chance some time.
