I chalk it up to a bad batch, or maybe one that has gone bad in aging.Well, I hope it was just a bad batch, I'd be willing to get some again provided I can try it first. The shop I go to only had it in small pre-wrapped wheels so no tasting to check the taste before purchasing the whole amount. If it wasn't for the overwhelming bitter aspect of the cheese it would have gone well with my homemade partial whole wheat sourdough. I lack the wood fired oven but I should be able to recreate it otherwise.I love Gouda or Edam cheese.
