I am a convert of almost 40 years. I don't remember the date of either. I have been married for almost 33 years and that date I never forget.

I would say for a baptism anniversary it would be the day you entered in to the waters of baptism.

If you would like to log in to your ward website you need to know your membership number and the date of your confirmation.

Flip a coin. I don't think it really matters since after you get sealed you're going to remember it as the anniversary of your sealing more than you will the anniversary of your baptism/confirmation.

If it falls on a Sunday or Monday you will need to be sealed the day before or the day after. I don't know that they hold you to the 365 days. It all depends on one's personal progress and getting your temple recommend from Bishop and then interview with Stake President. While they may sound daunting they are not and you will look forward to that day.
