I have been married for almost 33 years and that date I never forget. I would say for a baptism anniversary it would be the day you entered in to the waters of baptism. I don't know that they hold you to the 365 days. It all depends on one's personal progress and getting your temple recommend from Bishop and then interview with Stake President.
