I believe that the phrase "Son of Man" refers to Jesus Christ. I am trying to explain to myslf who the person decribed in the book of Abraham as "One like unto the Son of Man". Am I to far off the path to think that this could be a reference to Father Adam, that Father in Heaven deligated to Jesus Crist who deligated to Father Adam??

I like the name, and welcome. (and yes Christ refers to himself as teh Son of Man... but we area also sons and daughters of God).

No, the "one like unto the Son of Man" IS Jesus Christ, himself. That same being is the one that directs the work to create the earth, and then later is the one who volunteers to be the Savior.

Adam was a symbol, not of Christ, but of God the Father, and was called the Ancient of Days by Daniel.

Nephi uses similar terminology in 1 Nephi 1, where Christ is just described as "One" who descends. Christ had many roles anciently, including the "angel of his/God's presence", and often could have been perceived as one like the Son of God/Man, to one who was not fully certain.
