lds.org has all the church manuals online. I would start with Gospel Principles which is the Sunday School manual for newer members. Otherwise, I would recommend visiting Deseret Book and browse, and if there is a distribution center nearby go and browse for church related materials. Also, you might even consider a trip to a city with a large LDS population where there are brick-and-mortar Deseret Book stores. (I am so bummed they closed the one here in Orange County).

The best way I have found of learning what the church teaches and believes is serving in the church. The true gospel is not just talk, it is doing. See for yourself if we can walk the walk or if it is just talking the talk. Look for and participate in local service activites and see what kind of spirit the people involved are exhibiting. For example, in our ward this week we are taking care of the local community soup kitchen. I love working there, and I love it that the sisters in the ward go the extra mile and bake special additions to the meals served, and even collect coats and warm clothing to offer for those that need them.

One of the best things about church is the opportunities to become more like our Savior.
