I don't think it matters what the liquid is, but many churches use wine as that's what was probably used by Christ. Grape juice is also used and is fine as long as it doesn't sit out too long to where it starts to ferment. At least with water, the LDS church doesn't have to worry about sudden fermentation.

I just joined, and I live in California where Prop 8 looks very close either way. I'm Christian, but I have had several LDS friends, and I have a lot of respect for their beliefs.
