classylady Posted September 11, 2012 Report Posted September 11, 2012 Last night, baked chicken, baked potatoes, and crook-neck squash. Tonight? DH and son won't be getting home until after 9 pm. I'll probably not fix anything. What's the point? Probably not the best attitude. I have a really hard time getting up any incentive to fix meals when it's just for me. Quote

Wingnut Posted September 11, 2012 Author Report Posted September 11, 2012 last night i kinda broke my diet and had bbq chicken and onion rings, other wise every night for the last month it's been either a chicken breast with rice or a chicken breast with a few roasted potatoes. lol bland and boring but i'm down 31 pounds :)Mmmmm...onion rings.I want in. Made this (Tortellini Spinach Bake in Creamy Lemon Sauce | Our Best Bites) but the store was out of the spinach & cheese variety of tortellini, so we had three-cheese instead. Still really good.Last night, baked chicken, baked potatoes, and crook-neck squash. Tonight? DH and son won't be getting home until after 9 pm. I'll probably not fix anything. What's the point? MorningStar Posted September 12, 2012 Report Posted September 12, 2012 We're having Baked Ravioli. I use the frozen cheese ravioli from Costco and layer it in a casserole dish. Ravioli Sauce Cheese Favioli Sauce Cheese Sauce Sprinkling of parmesan cheese Baket at 350 for 45 minutes covered with foil and then uncovered for 10 minutes. It's easy and delicious! This is my sauce. 1 lb. ground beef 1 large can crushed tomatoes 1 can tomato sauce 1 packet spaghetti sauce mix 1 tsp. of garlic powder Brown ground beef and add all the other stuff. Let it simmer 5-10 minutes. If you get the ravioli from Costco, it's enough to make it twice and then some. :) Quote
carlimac Posted September 12, 2012 Report Posted September 12, 2012 Few days after the fact- left over Papa Murphys stuffed pizza. It was a special dinner for DH's birthday yesterday. And fresh - (as in just picked 30 min before) corn, beans and spaghetti squash from the garden. Yum!! Quote
NeuroTypical Posted September 12, 2012 Report Posted September 12, 2012 I made "chicken" "enchilada" "bake". Three lies for the price of one. 1 can chicken chunks from 2006 1 can black beans 1 can tomatoes & green chili 1 cup plain yogurt (substituting for sour cream) 1 can cream of mushroom soup a bunch of shredded cheese Cook the chicken, mix everything together with half the cheese, pour into 4 tortillas, put the rest of the cheese on top. Bake in dutch oven at 350 for an hour or two. If you open it and it seems to have an inch of liquid that doesn't belong, pour a half a cup of minute rice onto it and cook another 10 minutes. The black beans made everything a dark charcoal color except the tomatoes, which were still bright red. Kids picked the sides: Instant mashed potatoes, and apricot halves. Mamma is out of town. Guest Posted September 12, 2012 Report Posted September 12, 2012 Sounds pretty good to me LM, color notwithstanding. I made garlic roasted chicken leg quarters. Cheap and tasty. I picked up some green beans at a fruit stand yesterday (A gardener I am not. Five failed gardens and I gave up.) but to my annoyance, they're really old and fibrous. Lots of butter and kosher salt helped, I guess. I'm annoyed that I went to a fruit stand and paid twice as much for old produce as I would have paid at the grocery store for something better. Lesson learned. Quote

bcguy Posted September 12, 2012 Report Posted September 12, 2012 We have three zucini plants out front. The one from the rear yard was transplanted out front. Shock killed its biggest leaves. Smaller leaves are now growing. The one plant that is taking in the least amount of sunshine, is the largest one! Its leaves are now 16 inches in diameter, and has 8 zucinnis on it. the one plant at the end of the bed where the cars drive past, is the second smallest. So, I thought zucinnis should be the largest plant if taking in the most sun? Quote
