I'm pretty sure I could eat chocolate daily without diminished love for it. In very fact, I'm on a long trial to prove this fact, and so far the results are pretty conclusive: I'm not tired of chocolate.

But I digress.

Vort, are you playing games again? :] OK, let me take a shot at this. You don't consider Del Taco to be "Mexican" food, correct?

To be fair the resemblance Del Taco (and even Taco Bell) have with food from mexico is about on par with the resemblance Chef Boyardee has with food from Italy. That said he's being silly.

I served my mission in Italy, and I'll have you know I have loved Chef Boyardee from my childhood! Not to suggest there is anything Italian about Chef Boyardee, including his name...

When I ate food in Mexico, it did not taste very much like Del Taco.

Even the Mexican restaurants in Utah don't taste much like authentic Mexican food. I have yet to find a REALLY good Mexican restaurant in the Salt Lake area. The best one I have found in Utah was in the little town of Delta a couple of hours away.

I enjoy the occasional can (preferably cold) of Chef Boyardee, that it isn't particularly reminiscent of the actual dishes it claims heritage from doesn't mean it doesn't have merits. As far as the name, he Americanized it, the original Boiardi looks a lot more Italian than Boyardee... actually the latter almost looks Swedish for some reason.

I remember going back to visit in Provo after some years away, probably in the early 90s, and finding a local restaurant chain called Lenito's. Their tacos seemed very authentic.
