I don't have lettuce or spinach, so I'll be on my way to the store to grab those. Any suggestions on making an exciting salad! Yes, I know, salad, not very exciting BUT it sounds so good on a hot day. I'm making two salads, one for the husband, so I'm open to non-vegetarian salad dishes as well. Sweet Chili Sauce 1/4 c. lime juice For your husband: Set aside a little bit of dressing to marinade chicken breast. Grill the marinated chicken and cut into strips. Mix together boiled cubed sweet potatoes cubed seeded cucumbers cubed mangoes chopped scallions ... and the dressing. Line a plate with ripped romaine lettuce, add the mixed salad, top with chicken. Garnish with almonds and sprinkle hot sauce if you like. Quote

We use: Romaine lettuce Walnuts Gorganzola cheese, crumbled Dried cranberries Chicken (fresh, shredded) Cucumbers Use a raspberry vinnagrette as dressing. You can leave off the chicken if desired. I also like taco salads--lettuce, tomatoes, cheddar cheese, onions, taco meat, tortilla chips, sour cream, salsa, ranch dressing. We also like to make a Greek salad: lettuce, cucumbers, tomatoes, onions, olives, crumbled feta cheese, oil/vinegar (or Ken's Greek Dressing). Quote

Iggy Posted July 31, 2012 Report Posted July 31, 2012 Home sprouted garbanzo beans, mung beans, radish seeds, alfalfa seeds. Canned black beans, kidney beans. When you sprout your own beans, you are adding more nutrients, protein and dietary fiber. As for Chia seeds, add them to your smoothies. They have no taste, no calories, no carbs. They enhance what ever flavor they are added to, and they fill you up. They are super high in Omega3's too. Wonderful, beautiful, delish Chia seeds. From the store - nearly any raw vegetable. Jicama, snow peas, green onions, radishes, broccoli, cauliflower, avocado, canned pickled beets, hard cooked egg. Cucumber, zuchinni (green & yellow), red onions, etc., etc. Just imagine a buffet salad bar- Leave the iceburg lettuce at the store and go with fresh spinach, leafy green and red lettuce and the 'gourmet' garden greens. Garbanzo's only take about 16 hours to sprout and they can easily be digested raw. The other beans (pinto, navy, lima, kidney, adzuki, anaszi, great northern) all have to be cooked after they have sprouted. Again, beans will sprout in 12 hours of soaking. Drain the soak water, water your outside plants with it rather than dump it down the drain. Rinse, and then cook the beans in twice the amount of water. Once they are cooked tender, you can drain, chill and add them to salads, soups, stews, stir frys, etc. Try a variety of dressings at the same time. Put a tablespoon of each dressing in a small dish, then dip your fork in the dressing, then pick up a bit of salad. You get a taste of the dressing, without drenching your salad. Quote

Dressing recipes welcome, too!Grilled asparagus, pickles instead of cucumber, banana peppers, blue berries, apples, sprouts. chicken grilled with a BBQ rub, peperoni, avocado, last bag of salad i made had romaine lettuce, red leaf lettuce, butter lettuce, red cabbage, and spinach. MorningStar Posted August 1, 2012 Report Posted August 1, 2012 This dressing is great on green or pasta salads: 1 cup extra virgin olive oil 1/2 cup red wine vinegar 2 cloves garlic, minced 1 tablespoon dijon mustard 1/2 tsp. dry mustard 1 tsp. dried oregano 1 tsp. sugar Salt and pepper to taste I make it with "chopped salad". Iceberg lettuce, fresh basil, green onion, tomato. garbanzo beans, mozzarella & provolone cheese (grated), chicken, and salami. Chop the lettuce, tomato, chicken, and salami until small pieces. Hope you get to try it another day. If you don't want meat, you can leave that out. :) Quote
