Wingnut Posted September 8, 2012 Author Report Posted September 8, 2012 I made pizza last night. I use this pizza crust recipe: Annie's Eats: Perfect Pizza Crust. I've made it several times now, and the only comment I have on the recipe is that you need to weigh the flour -- measuring in cups isn't always accurate.This is the pizza that I made (the above is only a crust): The Café Sucré Farine: Strawberry Balsamic Pizza with Chicken, Sweet Onion and Applewood Bacon. Okay, I know it might sound weird, but it's really really good. My own notes: I use BBQ sauce instead of Sriracha, and I saute the onions lightly before adding them to the pizza. Quote

The cream corn in the cornbread was the result of opening cream corn instead of whole corn for the soup. The soup is my comfort food. I make it when I am stressed. :) Hamburger Vegetable Soup 2 lbs Hamburger meat 3 cans diced tomatoes 1 med onion chopped 2 c. cut green beans 3 stalks of celery diced 1 can of whole corn 2 c. diced potatoes 1 c. diced carrots 3 c. V-8 juice Sauté hamburger, onions, celery together until hamburger is slightly brown but not hard. Add carrots and cook for about 5 min. Pour off excess fat and add potatoes, corn, tomatoes, green beans, and juice. Bring to a boil and then simmer till done. And as I'm posting I have crook-neck/pineapple bread in the oven. I'm using a zucchini/pineapple bread recipe, but I'm using crook-neck instead of zucchini. Potato Wedges (deli again), I bake them longer at home so they are crispier. Tossed Garden salad: Hubs = 1/4 tomato chopped, two slices onion, little bit of alfalfa/radish/lentil/mung sprouts. Iggy- 1/2 tomato chopped, two slices onion, lots of sprouts, avocado. Both with mixed gourmet baby greens. Tonight we had hamburger patties, Hubs=Cajun seasoning on his, Iggy=fresh cracked pepper and Lawrey's Season Salt, Alfredo Noodles, steamed broccoli bits. Quote

I'm impressed.I used to make pizza almost every week, but since I haven't had a fully functional kitchen since before Memorial Day, I haven't made pizza all summer. I now have usable countertops again, a sink and dishwasher, and an oven, and I can cook/bake whatever I want. I'm really excited about it...probably more than I should be. :) Quote

selek Posted September 10, 2012 Report Posted September 10, 2012 Spiced Plum Porkchops (Slow-cooked)*Ingredients4 (3/4 inch thick) boneless pork chops4 ripe plums, pitted and quartered3/4 cup pineapple juice2 tablespoons balsamic or red wine vinegar3 tablespoons brown sugar1 teaspoon ground cinnamon1/4 teaspoon ground ginger1/4 teaspoon ground nutmegDirectionsPlace the pork chops, and plums into a slow cooker. Mix together the pineapple juice, balsamic vinegar, brown sugar, cinnamon, ginger, and nutmeg in a bowl, stirring to dissolve the sugar, and pour the mixture over the pork chops and plums. Cook on Low for 8 hours (or ~3 hours on high). When serving, drizzle chops with left over sauce. I (roughly) doubled the amount of liquid, and then skimmed off the fat before thickening the sauce. I served the whole kit-n-kaboodle over a bed of steamed rice (heavy on the sauce). Quote
