Best way to ruin a steak.  Add asparagus.

And I don’t see the desire for wine.

I cant imagine how much my colleagues have wasted on EtOH, wine collections and cellars, etc.

I do get some swazzy balsamic vinegars and maple syrups though.

I love salt.  

Overheard at my house.

“I already oversalted it”

“Yeah, but I didn’t see it go on.  And my eyesight isn’t what it used to be.”

audible eyeroll.

So, I’ll be over in a few hours. I’ll bring the steaks, go to your local supermarket and buy all the salt possible. I’m there dude I also love salt.

This is another favorite.

“You salt your bacon?!” 

When I get home I may take a photo of our collection of salt pepper and shakers.  I’m a bit of a snob.

I like my sea salt shaved.

This baby shaves off flakes that increases the surface area of the salt.

My wife is snobbish about pepper. She only buys this type. 
 

It all tastes the same to me.

Over in Japan asparagus is commonly paired with *pork* instead of beef, to the point that you'll see people doing bacon-wrapped asparagus as a light menu item.

I've been pondering this for some time (while nibbling bits of New York strip seasoned with Daddy Hinkle's original), and here's all I've managed to come up with:

  • peak
  • speak
  • teak
  • steak
  • take
  • stake

Therefore, stake is something you pound into the ground (or a vampire's heart, whichever), and that slab of cow-meat?  We've been pronouncing it wrong.  It's a "steek"...  And it just so happens that my steek is just as good cold as it is hot. :D I think I'll go get some and have it for a treat.

I like it rare - though not too rare. Rare enough to be red in the middle, but not cold. When I'm cooking it myself I like it with fried onions and mushrooms, and baked potato with actual butter, and peas*. My mouth is watering at the thought!

*Fresh peas only though. Or frozen are as good as fresh. The very thought of tinned peas makes me want to vomit!

(Yes, that can on the top shelf is indeed genuine Family Canning rolled oats from 2006.  I've been rotating them through by making banana cookies.)

Speaking of eating contests, I’m sure you guys know this but in 2020 we passed through Amarillo. A place there was offering 72 oz steaks. Even in my teenage years when I would eat nonstop I don’t think I could do that.

Not the best Steak I've ever had, but decent. 

As for my steak...don't normally care about what the cut is as long as it is decently SEASONED.

The better one is at seasoning it while it is cooking (marinades work as well...not all marinades are made equal) the better the steak in general.

I prefer mine cooked medium.  I've had far too many medium cooked medium rare (or on one or two occasions...rare) and far too often medium well.  At least medium keeps it somewhere in the vicinity of where I like it.  Still, as well as it's seasoned well...I can probably still eat it...unless it is well done.  In which case it becomes unpalatable for me normally.
